- 30 min boot camp
- incline leg lifts 20x3
- barbell squats 55lbsx20x1
- barbell squats 75lbsx15x2
- single leg dumbbell dead lifts 12lbsx10x3
- pistol squats, 5 each leg
- finished up with 10min on the step mill

Microwave Chocolate & Peanut Butter Protein Cupcake

Approximate Ingredients:

Cupcake:
• 1/8 tsp baking powder
• 3 Tbsp egg whites (or egg white from one egg) 
• 1/4c milk (any kind) 
• 1 Tbsp honey (Agave or Stevia works too) 
• 1/4c Rolled Oats 
• a little less than 1/4c Chocolate Protein Powder (this was 1/2 of a scoop for me)
• 1 1/2 Tbsp Gluten Free Coconut Flour

Frosting:
• 2 Tbsp chocolate PB2 (powdered peanut butter)
• 1/4c plain Greek yogurt
• water

Super Easy Instructions:

Cupcake: Mix dry ingredients together well. Add wet ingredients; mix well. Pour batter into a microwave safe cup or bowl that has been sprayed or greased with olive/coconut oil, a healthy cooking spray, or a cupcake liner. Microwave for 30-45 seconds. Don’t over heat - it will lead to a very dry cupcake!

Frosting: Mix PB2 and Greek yogurt together. Add water by tsp, mixing well, until the desired consistency is achieved. Frost cupcake with frosting, and top with whatever you’d like. I used some fresh raspberries from our garden! Enjoy!

Note: I wanted a healthy combination of protein & carbs as an after workout treat. If you’d like to lower the carbs and calories, remove the oats and flour, add more protein powder, and maybe some plain Greek yogurt, so it doesn’t get too dry! If you really want something decadent, try adding a little coconut oil, unsweetened cocoa powder, or chopped dark chocolate! This recipe is really forgiving, so feel free to experiment!

This popsicle set is one of the best impulse buys I’ve made. Seriously. I have a lot of fun trying to create delicious concoctions from whatever we have around the house…some aren’t so successful. But these however are on the success list! They are super easy to make and fuel my coconut obsession.  

Coconut Nutella Popsicles

1 cup coconut milk

1/3 cup nutella

3+ tablespoons shredded coconut

Honey Coconut Popsicles

2 cups coconut milk

3 tablespoons honey

3+ tablespoons shredded coconut

Instructions:

Mix the various ingredients in a small mixing bowl and pour into your molds (each recipe makes 3-4). After about an hour in the freezer, insert your popsicle stick and return to freezer until ready to serve. At this point, I also added more shredded coconut to the bottoms of each popsicle because it looks even tastier.

If you need molds, these are pretty cool and I’ve heard wonders about the Zoku Popsicle molds. I also found some at World Market and Bed Bath & Beyond.

This is also a “fuck you” to fat shamers who would look at her without knowing anything about her and label her “unhealthy”.

Totally love this post and I agree, I just always wonder how they can train like that and still remain big. But whatever, she’s tons stronger than I ever will be so she’s doing something right!

Why yes I did eat ice cream for breakfast :) The other day, I sliced up a bunch of strawberries & bananas, covered them in plain greek yogurt, rolled them in chocolate protein powder, and froze them. Somehow, those 3 delicious ingredients ended up making a final product that was actually kind of gross. No idea how that happened. But anyways! I hate throwing out good food, so I decided to throw them into a food processor instead :) I had every intention of just making a humble smoothie. I added the yogurt & protein covered fruit, unsweetened vanilla almond milk, and a little more protein powder. OH MY GOODNESS: My result was nothing short of soft serve ice cream!! I am usually a complete chocoholic, but this was strawberry-banana goodness with just a hint of chocolate, and it was fantastic! Honestly, the pictures just do not do it justice!!

Here’s the approximate recipe:

- 1 large banana, sliced
- about 20 medium strawberries, sliced into halves or quarters
- 1 scoop protein powder (about 1/2 scoop to cover the fruit, then another 1/2 scoop poured into the food processor)
- 3/4 cup plain Greek yogurt
- 1 1/2 cup unsweetened vanilla almond milk

 Coat banana and strawberry slices in Greek yogurt, then protein powder (this ended up being way messier than I had anticipated; best thing is to just embrace the messiness!). Freeze these on a parchment paper lined baking sheet. Add frozen fruit, almond milk, and remaining protein powder to food processor. Blend until desired consistency!

It made around 6 cups (not counting how much I ate while blending it ;) ) and a 1 cup serving came out to 85 calories, with 11g Carbs, 2g Fiber, 6g Sugar, and 8g Protein!

Four months of progress! Dropped my body fat by 2%, while gaining 3lbs of muscle! So excited my hard work payed off, and feeling really motivated to keep it up!

What’s a girl to do when she wakes up hungry in the middle of the night? Head to the kitchen and get cooking, of course!! Forgot my casein protein shake last night, so I woke up around 3 am and was SO hungry. Went downstairs, had a banana, whey protein shake, & a big glass of water, then started in on cooking up some delicious food! Boot camp at 5:30 this morning!!

Feeling extra productive this morning! Woke up, worked out (Kettlebell swings, you’re killing me!), unpacked & packed dishes, did some laundry, ate a delicious breakfast (oatmeal w/chia seeds, flax seeds, and blueberries, plus one egg and one egg white scrambled with Mrs.Dash Southwest Chipotle spices, and jasmine green tea, of course), chugged my first liter of water, and it’s not even 7:00 am yet! Hubby and the little monkey are both still fast asleep upstairs :) Now off to get ready for work and keep this productivity up all day ;)
