Today’s Workout - 5:30am
- 30 min boot camp
- incline leg lifts 20x3
- barbell squats 55lbsx20x1
- barbell squats 75lbsx15x2
- single leg dumbbell dead lifts 12lbsx10x3
- pistol squats, 5 each leg
- finished up with 10min on the step mill
Microwave Chocolate & Peanut Butter Protein Cupcake
Approximate Ingredients:
Cupcake:
• 1/8 tsp baking powder
• 3 Tbsp egg whites (or egg white from one egg)
• 1/4c milk (any kind)
• 1 Tbsp honey (Agave or Stevia works too)
• 1/4c Rolled Oats
• a little less than 1/4c Chocolate Protein Powder (this was 1/2 of a scoop for me)
• 1 1/2 Tbsp Gluten Free Coconut Flour
Frosting:
• 2 Tbsp chocolate PB2 (powdered peanut butter)
• 1/4c plain Greek yogurt
• water
Super Easy Instructions:
Cupcake: Mix dry ingredients together well. Add wet ingredients; mix well. Pour batter into a microwave safe cup or bowl that has been sprayed or greased with olive/coconut oil, a healthy cooking spray, or a cupcake liner. Microwave for 30-45 seconds. Don’t over heat - it will lead to a very dry cupcake!
Frosting: Mix PB2 and Greek yogurt together. Add water by tsp, mixing well, until the desired consistency is achieved. Frost cupcake with frosting, and top with whatever you’d like. I used some fresh raspberries from our garden! Enjoy!
Note: I wanted a healthy combination of protein & carbs as an after workout treat. If you’d like to lower the carbs and calories, remove the oats and flour, add more protein powder, and maybe some plain Greek yogurt, so it doesn’t get too dry! If you really want something decadent, try adding a little coconut oil, unsweetened cocoa powder, or chopped dark chocolate! This recipe is really forgiving, so feel free to experiment!

because her proud mama didn’t get an Olympic jacket.
because despite being the highest ranked weight lifter in the USA, she had hell finding a sponser because she doesn’t look like “tinkerbelle”.
because the Olympics is about athletic ability.
This is also a “fuck you” to fat shamers who would look at her without knowing anything about her and label her “unhealthy”.
Totally love this post and I agree, I just always wonder how they can train like that and still remain big. But whatever, she’s tons stronger than I ever will be so she’s doing something right!
